A Fermented Feast at Valley Variety


A fermented feast to take place in Hudson, NY at Valley Variety

Valley Variety is collaborating with Faith Gilbert of Letterbox Farm Collective and David Chicane of Hudson Food Studio for a Fermented Feast on Tuesday, March 24, 2015, 6:30-9PM. The first part of the evening will be a hands-on workshop on the fundamentals of the fermentation process and then we’ll enjoy a 3-course dinner that highlights ways to integrate fermented foods into gourmet dishes.

The process of fermentation is a simple and low-cost way to preserve the harvest, and a powerful way to restore health from the inside out. Faith Gilbert of Letterbox Farm Collective will lead the group through a hands-on preparation of several lacto-fermented foods, including Ginger Carrots, Beet Kvass, Preserved Lemons and a Soda. Each person will take-home jars of fermented goods, recipes, a troubleshooting guide, and starter culture for a fermented soda.

Throughout the evening, David Chicane, Chef/Owner of Hudson Food Studio, will be preparing a 3-course dinner inspired by fermented ingredients.
